  • 2 cups long-grain white rice
  • 6 2x1/2-inch strips lemon peel (yellow part only)
  • 5 cups (or more) whole milk
  • 1 cup sweetend condensed milk
  • 2 canela or cinnamon sticks
  • 2 vanilla beans, split lengthwise in half
  • 3/4 cup brown raisins or golden raisins
  • Additional canela sticks or cinnamon sticks (optional)

Recipe Preparation

  • Bring 2 cups water to boil in medium saucepan. Remove from heat. Add rice; let stand 15 minutes. Pour rice into strainer and drain, then rinse rice under cold running water until water runs clear.

  • Bring 4 cups water to boil in large saucepan. Add rice, lemon peel strips, and salt and return to boil. Reduce heat to low, cover, and simmer until rice is almost tender, about 10 minutes. Drain. Discard lemon peel.

  • Combine 5 cups milk, sweetened condensed milk, evaporated milk, and 2 canela sticks in heavy large saucepan. Scrape in seeds from vanilla beans; add beans. Bring to boil. Reduce heat to medium and boil gently until mixture thickens and is reduced to 2 3/4 cups, about 30 minutes. Stir in rice, raisins, and sugar. Stir until raisins are plump and flavors blend, about 5 minutes.

  • Spoon pudding into bowls. Sprinkle with ground cinnamon and grated lemon peel. Garnish with canela sticks, if desired.

Rice Pudding with Raisins and Cinnamon

Mexican cooks prefer Ceylon cinnamon, a less pungent variety than the cassia cinnamon sold in U.S. markets. In Latin American markets, it will simply be labeled canela (Spanish for "cinnamon"). In supermarkets or specialty foods stores, look for Ceylon or Sri Lanka cinnamon.

This creamy, comforting dessert takes hardly any time to assemble and can be left to cook unattended while you prepare, eat, and clean up after a dinner party. Just stir rice, milk, and sugar together in a slow cooker coated with butter and turn it on high. By the time the dinner dishes are cleared and folks are poking around for something sweet, dessert will be ready. Just before serving, stir in brown sugar, raisins, vanilla, cinnamon, and more milk to bump up the creaminess. To jazz things up for the adults, soak the raisins in warm rum for 30 minutes before stirring them in.

Game plan: The rice pudding will thicken significantly as it cools. To reheat, place the desired amount of pudding in a saucepan and add about 1/2 inch of milk. Cook over medium-low heat, stirring occasionally and adding more milk as needed, until warmed through and creamy.

Old Fashioned Rice Pudding

This old fashioned rice pudding recipe in the slow cooker is so creamy and easy to make, uses Arborio rice and raisins, and is THE Ultimate Comfort Food! Be sure to double the recipe though, coz it won&rsquot last long!

  • ½ cup Arborio rice, 125 ml
  • ½ cup sugar, 125 ml
  • 4 cups whole milk, 3%
  • 3 Egg yolks, large, Tip: freeze the whites for later!
  • 1 tsp Vanilla
  • ¼ tsp Cinnamon, 1 mL
  • ½ cup Raisins , 125 ml / or dried cherries, cranberries or blueberries (your choice!)

  1. Pour the rice, milk and sugar into your slow cooker (spray with cooking spray) and cover and cook for 3.5 to 4 hours. Each hour give the rice a stir and cook until the rice is a bit mushy.
  2. When that&rsquos done, whisk the eggs together with a ½ cup of the hot rice mixture. This is called tempering the eggs.
  3. Then slowly mix this back into the slow cooker rice mixture. You need to be careful here, since we don&rsquot want scrambled eggs in our old fashioned rice pudding!
  4. Then you can add the raisins (or if you choose dried cranberries, cherries or blueberries!), vanilla, cinnamon.

How to Thicken Rice Pudding

If your rice pudding seems a bit too thin, you can easily thicken with a slurry. I prefer using a single teaspoon cornstarch with a tablespoon of water (or existing milk liquid from the pudding mixture). Stir this together until smooth, then mix into the pudding. Continue cooking for a few more minutes, and you should see it thicken fairly fast.

If it isn't thickening as fast as you think, give it time to work. Sometimes it takes up to 15-minutes for it to properly thicken. In that case, it's worthwhile to let it sit for a while before serving, to make sure it will set up in texture and thickness you prefer.

Note: This recipe is naturally thickened by adding a tempered egg mixture when almost done cooking.

How to make Mexican Rice Pudding Recipe

In this picture Mexican Fruit Candied: Pumpkin, Pineapple, Figs, Sweet Potato and Visnaga (Curcubita Ficifolia).

  • Place water, rice and the piece of cinnamon in a medium saucepan. Turn heat to high and bring to a boil, then reduce heat and simmer uncovered for about 20 minutes, until rice is tender. (Please check the ingredients list below)
  • While the rice is cooking, mix the whole milk with the condensed milk and stir well.

  • The rice will be ready when all the water has evaporated and it has formed some holes over the surface like in the above picture.
  • Remove pot from heat. Pour the whole milk and condensed milk mix into the saucepan and stir. If you would like to add the raisins or vanilla extract, you can add them now.
  • Return saucepan to heat, cover and keep cooking until it thickens. It will take about 5 to 10 minutes. Stir occasionally to avoid it from sticking to the bottom of the saucepan.

  • If the rice looks too dry for your taste, add ¼ cup of warm whole milk and stir. The end result has to look like a soft and creamy pudding.
