CHICKPEAS IN THE OVEN - RECIPE

ingredients

• 300 g of chickpeas
• 1 head of garlic
• 1 bell pepper
• 1 onion
• 1 bunch of dill
• 3 tablespoons breadcrumbs
• 1 tablespoon of inactive yeast flakes
• ½ teaspoon of turmeric
• salt, olive oil

Put the chickpeas in a bowl of water and leave them to soak from evening to morning.

Drain the water and add the pepper and onion over the chickpeas. Pass the composition with a vertical blender (manual), or with a food processor. If you use a robot, you may need to add water to the mix.

Crush the garlic cloves and add them to the pasta obtained, then the breadcrumbs, turmeric, yeast flakes and finely chopped dill. Stir to mix.

Wallpaper the oven tray with baking paper. Moisten your palms and shape the composition into larger balls, like balls. Put them in the tray.

These meatballs are absolutely delicious! Easy to make, baked, super fragrant and healthy.
Perfect at any age, but children will surely love them. My family was extremely pleased with them and continued to ask for them in the following days!

ingredients
1/2 can of quinoa
1 cup of water or vegetable / chicken soup
500 gr of chicken meat (boneless meat or breast)
3-4 bunches of cauliflower
1 or
1 teaspoon salt
1/2 teaspoon pepper
1 cup of breadcrumbs
2-3 tablespoons of parmesan

Boil the quinoa with water or soup and a little salt. When it has boiled, set it aside to cool. In parallel, boil 3-4 bunches of cauliflower. Allow them to cool as well.

While the quinoa and cauliflower cool, prepare the chicken. This time I used the boneless chicken leg, which I shredded in the food processor.
I put the meat in a bowl, then the quinoa, the chopped cauliflower by hand, the egg, the salt and the pepper. I mixed them well, until I had a composition that binds easily.
* If it does not bind, you can add a little breadcrumbs in the composition.

In a large plate I mixed the breadcrumbs with the Parmesan cheese. I formed the meatballs by hand and passed them through breadcrumbs & Parmesan cheese.
Lined up nicely in a pan, the meatballs went into the already hot oven for 10 minutes. Then I turned them on the other side and held them for another 10 minutes.

They were delicious and warm, with mashed potatoes and salad, but they were great the next day, cold, with lots of ketchup!

Donuts in the oven

My kids are crazy about donuts (so am I) so this donut recipe was tried on the spot and many enjoyed especially for the chocolate icing :). They are very fluffy and the fact that they are baked makes them better (the top) than the fried ones. They have only one disadvantage compared to those fried in oil, you eat more :)).

Ingredients for 16-18 pieces:

  • 500g flour
  • 1 or
  • 2 yolks
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 25g fresh yeast or 7g dry yeast
  • 200ml milk
  • 75ml oil
  • flavors (I put lemon)

1. To start, prepare the yeast dough, mix it with a teaspoon of sugar until it liquefies, then add 1 teaspoon of flour and 100ml of warm water. Let it grow.

Mix the yolks and whole egg well with the sugar then add the oil and flavors. Pour the mixture over the flour together with the raised yeast, salt, warm milk and knead an elastic dough that you let rise covered for 1 hour.

2. Spread a sheet of about 1 -1.5 cm and cut larger circles then a hole in the middle of each. We collect the remaining dough and use it again for other donuts.

3. Put the donuts in the tray lined with baking paper and let them rise for 30 minutes. This is very important so do not rush and let them grow beautifully.

4. Grease the donuts with the yolk mixed with oil and bake them at 180 degrees C for about 20 minutes.

We take them out on a plate and let them cool. You can eat them like this or glaze them. We chose the chocolate icing because we still have to recycle the estates from Christmas :)

5 For the icing, melt the chocolate together with the oil. When the donuts have cooled, turn them face down and lightly glaze them in warm chocolate.

I honestly like all kinds of oatmeal (and I have a bunch of oatmeal recipes here on EBF), but baked oatmeal is definitely one of my favorite ways to enjoy oatmeal. Here's why:

  1. The top of the list is the fact that it is the perfect recipe for cooking, but also elegant enough for a brunch. I like to make oatmeal on the weekends and enjoy it for breakfast all week.
  2. For these recipes you only need a mixing bowl and a single baking dish. Minimal vessels? Score.

  4. While many of the baked oatmeal recipes seem indulgent, all the ingredients in my oven oatmeal recipes are healthy and nutritious ingredients.
  5. They can be allergen friendly. Sensitive to dairy? Use a dairy-free milk. Do you need to be vegan? Replace a flaxseed egg instead of a traditional egg. Gluten free? Check!

Bake the avocado boats filled with eggs for 15-20 minutes. When you take them out, sprinkle with salt and pepper.

Chickpea meatball (falafel) recipe

240 grams of canned chickpeas (a can of 420 grams)
a handful of chopped parsley
a medium onion
two cloves of garlic
a teaspoon of salt
half a teaspoon of ground turmeric
a quarter teaspoon of hot paprika
a tablespoon of water (or canned juice)
four tablespoons sifted chickpea flour (two tablespoons uns sifted)
