Put 850 ml of milk to boil.

Separate the egg whites from the yolks.

Mix the yolks well with the sugar and vanilla sugar, then add the lemon peel and essence.

Beat the egg whites well with a pinch of salt.

We take a bowl of cold water and dip the spoon in the water every time we cut a lump from the egg white that we put in boiling milk.

After we have cut the whole egg white with a spoon, let it boil for 2-3 minutes and turn the egg whites on the other side for another 2-3 minutes to boil.

Remove the egg whites from the egg whites on a plate.

In the sugar yolks, add little by little the remaining but warm milk, which we pour over the boiled milk. Let it boil for a while, then add the boiled egg whites.

Let cool for about 2 hours, then serve.
